Confessions of a cake decorator......

This style of cup cakes are baked on the morning of the wedding then piped with lashings of freshly made buttercream, so after  the usual 4a.m. start the cakes were ready to be decorated.   Icing sugar was sifted, butter softened and a brand new mixer unpacked and ready for action.   Mixers come and go and you do get used to the old favourite but like cake decorators, even these get worn out on occasions.

Unfortunately, unbeknown to this cake decorator, the settings on the new mixer were completely different.   Instead of the gradual build up of speed the new mixer had the function to start at full speed from the flick of a switch.

Picture the 'before' scene - a pristine kitchen, rich with the aroma of freshly baked cakes, neatly laid out baking trays and cooling racks and a bit bleary eyed but ready for action, freshly aproned, cake decorator.

Now picture the scene after the mixer, brim full of icing sugar was switched to go...................

Icing sugar billowing out of doors and windows and a fair impression of the Home Pride flour sifters after a hard day at the mill!
